Its lambs are not hormonally or chemically stimulated, their environments are not chemically enhanced, their lifestyles are not artificially manipulated. They roam 4,000ha of pastureland, they graze volcanic red loam nourished lucerne and farm grown grains, they drink from streams, they shelter beneath copses of eucalyptus and Kurrajong trees.
Yes, Jelm and science play a vital role. Jelm monitors its lambs' vitamins and mineral intake, ensures pure drinking water, measures their weight gain. It helps nature do its job.
Our award winning year came at the end of Australian farming's hardest period. "Decision making is problem solving," is Jelm proprietor, Mark Williams', motto. Our first decision was to support nature, not fight it. Innovations came from that. New grain feeding regimens. Intensive winter finishing. The science of providing access to free running water in drought conditions.

Jelm Lamb
Lamb was the first animal to be raised for eating, about 9,000 years ago in the Middle East.
If the animal is more than 1 year old, it is not lamb. If it has its first incisor (nearing 1 ½ years), it is mutton.
Milk fed lamb has the mildest flavour and a pink colour. As the animal lays down intramuscular fat, the intensity of flavour increases, though what it eats plays a role too.
Grass fed lamb tends to have a stronger flavour than grain fed.
Tenderness is predominately determined by age and genetics. Getting the best balance of genes, age, environment, food and feeding method is how Jelm’s proprietor, Mark Williams, earned thirteen Royal Sydney Fine Food Awards in 2009.
